Eat Your Veggies
Tomorrow, the Farmer’s Market will be open in Kerrytown from 7 a.m. until 3 p.m., providing the opportunity to buy fresh fruits and vegetables while simultaneously supporting the local economy.
With this warm weather, salads are a light, refreshing meal that can be very simple or very complex. While lettuces of various varieties are in season at the moment, if you tend to only grab iceberg and/or romaine, here are some additional greens to keep in mind:
- arugula – also known as rocquette, this vegetable has a peppery flavor
- chard – characterized by very colorful stalks with green leaves (both of which are edible), this vegetable can make your salad more visually appealing
- kale – this vegetable is very nutritious, so make sure to try to incorporate it into your diet, if you have not already done so
- spinach – while eating cooked spinach is better for you, if you really cannot stand the taste, try adding some raw spinach to your salad
Some other vegetables that are in season this month are beets, broccoli, carrots, cilantro, green onions, and parsley – also great additions for a salad, or inspiration for entirely different types of dishes. A dish that combines many different vegetables is minestrone, as well as other soups and stews.
