The Baking Continues…

…with lemony goodness. Today’s recipe: Lemon-Honey Drop Cookies.

Quick note about the recipes being posted: the ingredient measurements are holiday sized (which means that the measurements are for making cookies for many people). Therefore, if you are making cookies just for yourself, or for yourself and one other person, it is recommended that you cut all of the ingredients in half.

Tools:

  • 3 large mixing bowls
  • Mixer
  • Whisk
  • Measuring cups and spoons
  • Baking sheets
  • Parchment paper or cooking spray
  • Pastry brush

Ingredients:

For the Cookies

  • 1 cup sugar
  • 14 tablespoons butter
  • 4 teaspoons grated lemon rind
  • 2/3 cup honey
  • 1 teaspoon lemon extract
  • 2 large eggs
  • 3.5 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup plain yogurt

For the icing:

  • 2 cups powdered sugar
  • 4 tablespoons lemon juice

For the topping:

  • 4 teaspoons grated lemon rind

Instructions:

  1. An hour or two before making the dough, take the appropriate amount of butter out of the refrigerator and allow it to acclimate to room temperature.
  2. Place the sugar, butter and lemon rind into one of the mixing bowls. Using the mixer, beat these ingredients on the medium speed until the mixture is light and fluffy.
  3. Add the honey, lemon extract and eggs. Continue to use the mixer until all of the ingredients are well blended.
  4. In another mixing bowl, combine the flour, baking powder and salt with the whisk.
  5. Alternately add the flour mixture, then the yogurt to the sugar mixture, beginning and ending with the flour mixture.
  6. Chill the dough in the fridge for 2-3 hours.
  7. Preheat the oven to 350 degrees Fahrenheit.
  8. Either spray your baking sheets with cooking spray, or line the baking sheets with parchment paper.
  9. Place dough by the tablespoon onto the baking sheets, each cookie spaced 2 inches apart from the others.
  10. Bake for 8-12 minutes (until the cookies are lightly browned).
  11. In the last mixing bowl, add the powdered sugar and lemon juice. Stir these ingredients together with a whisk.
  12. While the cookies are still hot, brush the icing evenly on top. Then sprinkle the lemon rind on top of the cookies.

In addition to being delicious, these citrusy cookies also make the kitchen smell delicious.
